Stewing the apples in a strong brew of Twinings Ginger Green Tea is the clever bit here: the fruit drinks up the ginger and a hint of Green Tea before any crumble goes near it. Bake it under your usual topping, or just spoon the soft apples over ice cream and call it pudding.

You'll need

  • 3 tea bags of Twinings Ginger Green Tea
  • 200ml freshly boiled water, cooled for about a minute (around 80C)
  • 6 cooking apples, peeled, cored and sliced
  • 3 tablespoons honey or caster sugar
  • 1 teaspoon ground ginger
  • Juice of half a lemon

Method

  1. Let the water cool a minute, then steep the 3 bags for 4 minutes and lift them out without squeezing.
  2. Pour the tea into a wide pan, add the honey or sugar, ground ginger and lemon juice, and bring to a gentle simmer.
  3. Add the apple slices and stew gently for 8 to 10 minutes, until just soft but still holding their shape.
  4. Spoon into a baking dish, top with your favourite crumble mix and bake at 180C fan for 25 to 30 minutes.
  5. Or skip the crumble and spoon the warm ginger apples straight over ice cream or yoghurt.
  6. Stir a little lemon zest into the crumble topping before baking; it lifts the whole dish and picks up the green tea note in the filling.
What you'll end up with: Soft, glossy apple slices carrying gentle ginger and a trace of green tea, good under crumble or over a scoop of vanilla.
