Floral Citrus Spritz Mocktail (Tropical Sun Calm)
Chilled Tropical Sun Calm with lemon and soda, a soft, floral, alcohol free spritz.

Chilled Tropical Sun Calm makes a delicate, floral spritz: the honeyed camomile and lemongrass give it a soft, scented base that you brighten with lemon and lengthen with soda. Scatter a few edible flowers over the top and it is as pretty as it is refreshing, with no alcohol.

You'll need
- 3 tea bags of Tropical Sun Calm
- 300ml freshly boiled water (100C)
- 1 tablespoon honey, or to taste
- 200ml chilled soda water
- 1 lemon, half juiced and half sliced
- Edible flowers, optional, and plenty of ice
Method
- Steep the 3 tea bags in the boiled water for 5 minutes, then lift them out.
- Stir in the honey while warm, then leave to cool and chill well.
- Fill two tall glasses with ice and divide the chilled tea between them.
- Add the lemon juice, top each with chilled soda water and stir gently.
- Finish with lemon slices and a few edible flowers, then serve straight away.
- A teaspoon of elderflower cordial in place of half the honey deepens the floral character without overpowering the camomile, and the colour it lends is subtle but lovely.
