Chocolate Chai Hot Chocolate
A rich hot chocolate from chocolate chai powder with real dark chocolate melted in for body, topped with marshmallow and cocoa.

This turns an instant chocolate chai powder into a proper, rich hot chocolate. The trick is melting a couple of squares of real dark chocolate into the milk before the powder goes in, which gives it the spoon coating body of a continental cioccolata rather than a thin instant cup. The chai powder then adds its warm spice on top of the deeper Cocoa.

You'll need
- 25g Drink Me Chai Chocolate Chai Latte powder (1 standard serving)
- 250ml whole milk
- 2 squares of dark chocolate (at least 70% cocoa)
- 1 large marshmallow
- Half a teaspoon of dark cocoa powder, for the dust
- 1 warmed 400ml mug
- 1 small saucepan
- 1 small balloon whisk
Method
- Warm a large mug with hot water, then pour it away.
- Pour the milk into a small saucepan and drop in the dark chocolate squares while the milk is still cold.
- Set over medium low heat and whisk gently in slow circles for a couple of minutes as the chocolate melts in, so it does not catch on the base.
- Warm it until it just steams, around 70C, not boiling; it should be glossy and uniform.
- Off the heat, shower in the chai powder and whisk hard for thirty seconds, breaking up any clumps, until a soft foam rises.
- Pour through a fine sieve into the warmed mug to catch any lumps.
- Drop a marshmallow into the middle and dust the top with cocoa through a sieve.
- Tip: melting real chocolate into the milk is what gives the body, so do not rely on the powder alone.
