Chocolate Chai Hot Chocolate

Method

  1. Warm a large mug with hot water, then pour it away.
  2. Pour the milk into a small saucepan and drop in the dark chocolate squares while the milk is still cold.
  3. Set over medium low heat and whisk gently in slow circles for a couple of minutes as the chocolate melts in, so it does not catch on the base.
  4. Warm it until it just steams, around 70C, not boiling; it should be glossy and uniform.
  5. Off the heat, shower in the chai powder and whisk hard for thirty seconds, breaking up any clumps, until a soft foam rises.
  6. Pour through a fine sieve into the warmed mug to catch any lumps.
  7. Drop a marshmallow into the middle and dust the top with cocoa through a sieve.
  8. Tip: melting real chocolate into the milk is what gives the body, so do not rely on the powder alone.
