Thompson's Signature Blend is the Belfast blender's fuller, more rounded tea, a mix of Assam, Kenya and Ceylon leaf with enough body for milk but enough character to drink black. It rewards a warmed pot and a proper brew.

Makes a small pot for two. Warm the pot, brew four to five minutes, then pour.

You'll need

  • 2 tea bags of Thompson's Signature Blend
  • 500ml freshly boiled water (100C)
  • Milk, to taste
  • Sugar, to taste (optional)

Method

  1. Warm a teapot with a little boiling water, then tip it out.
  2. Add the 2 bags and pour over the freshly boiled water.
  3. Brew for 4 to 5 minutes, then lift out the bags.
  4. Pour, add milk to taste, and sugar if you like.
  5. Try the first cup black and the second with milk; this blend has the character to be enjoyed either way.
What you'll end up with: A rich, full-bodied multi-origin cup, lovely with milk but good enough to drink black.
