Tropical Sun Cerassie (cerasee) is a Caribbean kitchen staple and proudly bitter, far closer to the old apothecary herbs than to anything you would call a fruit tea. The knack is to keep the steep short and to round it off the traditional West Indian way, with honey to soften and a squeeze of lime to lift.

You'll need

  • 1 tea bag of Tropical Sun Cerassie
  • 200ml freshly boiled water (100C)
  • 1 to 2 teaspoons honey, to taste
  • A squeeze of lime, to taste

Method

  1. Pop the bag into your cup and pour over the freshly boiled water.
  2. Steep for 3 to 4 minutes, no longer, so the bitterness stays in check.
  3. Lift out the bag, then stir in honey to soften the bitterness.
  4. Add a squeeze of lime to brighten it, taste, and adjust the honey and lime until it suits you.
  5. Cerassie is an acquired taste; first timers should add honey generously and start with lime, then reduce both gradually as the palate adjusts over subsequent cups.
What you'll end up with: A traditional Caribbean bush tea, bitter at heart but rounded and brightened with honey and lime.
