Cold brew is the best thing you can do with Earl Grey: cold water draws out the bergamot oil and the smooth Darjeeling without the tannin that turns hot brewed iced Earl Grey bitter. What you get is an almost perfumed iced tea that needs no sugar, served with a twist of lemon or orange.

It uses Teapigs Darjeeling Earl Grey, a whole leaf bergamot Black Tea. Five minutes of work, then the fridge does the rest.

You'll need

  • 4 Teapigs Darjeeling Earl Grey tea temples
  • 1 litre cold filtered water
  • A 1 litre jug or bottle with a lid
  • Lemon or orange twists and ice, to serve

Method

  1. Put the 4 temples into the jug and pour over the litre of cold filtered water.
  2. Lid and refrigerate 6 to 8 hours, no longer. Earl Grey gives up its bergamot quickly even cold, and over long steeping can dull it.
  3. Lift the temples out and discard without squeezing, so no tannin is pressed out.
  4. It is clean and fragrant; it needs no sugar at all.
  5. Serve over ice with a twist of lemon or orange peel, expressed over the glass to add citrus oil.
  6. Keeps 3 days lidded in the fridge. Caffeinated, so an afternoon rather than evening drink.
What you'll end up with: A perfumed cold brewed Earl Grey with full bergamot and none of the usual bitterness: a clean iced tea that needs no sugar.
