Cold Brew Earl Grey

You'll need
- 4 Teapigs Darjeeling Earl Grey tea temples
- 1 litre cold filtered water
- A 1 litre jug or bottle with a lid
- Lemon or orange twists and ice, to serve
Method
- Put the 4 temples into the jug and pour over the litre of cold filtered water.
- Lid and refrigerate 6 to 8 hours, no longer. Earl Grey gives up its bergamot quickly even cold, and over long steeping can dull it.
- Lift the temples out and discard without squeezing, so no tannin is pressed out.
- It is clean and fragrant; it needs no sugar at all.
- Serve over ice with a twist of lemon or orange peel, expressed over the glass to add citrus oil.
- Keeps 3 days lidded in the fridge. Caffeinated, so an afternoon rather than evening drink.
