Cold Brew Earl Grey

Method

  1. Put the 4 temples into the jug and pour over the litre of cold filtered water.
  2. Lid and refrigerate 6 to 8 hours, no longer. Earl Grey gives up its bergamot quickly even cold, and over long steeping can dull it.
  3. Lift the temples out and discard without squeezing, so no tannin is pressed out.
  4. It is clean and fragrant; it needs no sugar at all.
  5. Serve over ice with a twist of lemon or orange peel, expressed over the glass to add citrus oil.
  6. Keeps 3 days lidded in the fridge. Caffeinated, so an afternoon rather than evening drink.
