Sesame is baked right through these rather than scattered over the top, which is the first thing to say and the reason the pack is out of the question for anyone avoiding it. The second thing is that opinion on this one splits hard, and it splits for a predictable reason: people buy it expecting a cracker. It is not one. A crispbread is baked until almost all the water has gone, leaving something rigid, porous and faintly bitter, with none of the fat and salt that make a cracker keep asking to be eaten. Bare, it is hard work. What the sesame gives back is a little of what the long bake took out, a toasted oily note that stays behind once the dryness has cleared, and that is the whole case for choosing it over a plain slab. Load it with mature cheddar, pate, smoked fish or something mashed and oily and it holds the lot flat without bowing, which is not a trick the crackers on this page can manage. Build it at the table rather than an hour early. Wheat and rye both, so gluten is a question for the pack.
