Bitterness is the rare thing here. Almost nothing else on a biscuit shelf is willing to put something genuinely bitter into a child's hand, and the dark wafer is exactly that: dry, cocoa-heavy, and the reason a sweet fatty filling can sit between two of them without the third biscuit turning sickly. Take the bitterness out and it is a sugar sandwich. The embossing is working as well, and not for decoration: a moulded face bakes more evenly than a flat one and sets the lines the wafer breaks along, which is why the halves come apart so tidily and so consistently.
