The Story Behind Carr's
Carr's is a Carlisle name in British cracker baking, and that is company heritage rather than a statement about where this particular pack was made. What matters to a buyer is where Melts sits in the range. The traditional Carr's cracker is thin, brittle and designed to vanish under cheese; Melts is a lighter, slightly more substantial bake sold as something you can happily eat on its own.
The flour, the fat, the allergen advice, any certification marks and the country of origin must all be read off the current UK pack. This is a new brand for our shelves, and crackers are a new category for us entirely.

What You Are Actually Buying
- A carrier, and a good one: this is the pack to buy when the topping is the point. The seasoned Melts are the ones to buy when it is not.
Getting It Right in the Cup
- Room temperature: a cold cracker is a duller cracker, and there is not much flavour here to lose in the first place.
- Storage: sealed, cool and dry. A cracker stales by taking on moisture from the air rather than by drying out, which is why a pack left open goes soft rather than hard.
- Reviving a soft pack: three or four minutes in a hot oven drives the absorbed moisture back off and the snap returns. Let them cool before judging, because the crispness arrives as they cool rather than while they are hot.
- Crushed: a plain crumb is the more useful one in a kitchen, because you decide the seasoning rather than the pack deciding it for you.
- Best with: whatever you already have. That is the honest answer for a good plain cracker.

- 30g butter, melted
- Herbs, pepper or a little mustard powder
- 1 baking dish
- Crush the crackers to a coarse crumb in a bag with a rolling pin.

- Stir through the melted butter until the crumb is loose rather than wet.
- Scatter over the dish and bake until browned.
