Spiced Pear Cordial Base
A pear and spice cordial: an instant warm cup, a fizzy pear soda, or a pear gin cocktail base. Caffeine free.

A spiced pear cordial is a lovely thing to have in the fridge come autumn: a clear amber syrup of pear and gentle spice that becomes an instant warm cup, a fizzy pear soda, or the base for a pear gin cocktail. It lives on real pear flavour, so brew it long and hot to draw the fruit out fully.

It uses Teapigs Spiced Pear, a caffeine free fruit and spice infusion. Fifteen minutes, and it makes about 500ml.
You'll need
- 6 Teapigs Spiced Pear tea temples
- 400ml water
- 230g caster sugar
- Juice of half a lemon
- 1 strip of lemon zest
- 1 cinnamon stick, optional, for extra warmth
Method
- Boil the water and pour over the 6 temples in a covered jug, then steep 8 minutes for a strong pear brew.
- Lift the temples out and pour the warm brew into a pan with the sugar, zest and cinnamon stick.
- Stir over low heat just until the sugar dissolves, then simmer 4 minutes to a light amber syrup.
- Take off the heat, stir in the lemon juice, cool and remove the zest and cinnamon.
- Pour into a clean bottle. Warm cup: 1 part base to 4 parts just boiled water. Pear soda: 1 part base, 4 parts cold soda. Cocktail base: 1 part base, gin and a squeeze of lemon over ice.
- Keeps 2 weeks in the fridge; caffeine free as a base.
