Spiced Pear Cordial Base

Method

  1. Boil the water and pour over the 6 temples in a covered jug, then steep 8 minutes for a strong pear brew.
  2. Lift the temples out and pour the warm brew into a pan with the sugar, zest and cinnamon stick.
  3. Stir over low heat just until the sugar dissolves, then simmer 4 minutes to a light amber syrup.
  4. Take off the heat, stir in the lemon juice, cool and remove the zest and cinnamon.
  5. Pour into a clean bottle. Warm cup: 1 part base to 4 parts just boiled water. Pear soda: 1 part base, 4 parts cold soda. Cocktail base: 1 part base, gin and a squeeze of lemon over ice.
  6. Keeps 2 weeks in the fridge; caffeine free as a base.
