This uses the liquorice and spearmint infusion as a poaching liquid, and it works a treat: liquorice has a real affinity with pear, while a little spearmint keeps things fresh. The pears come out tender and glossy in a light, honeyed syrup.

Serves four. Brew the tea strong, simmer the pears in it with honey and cinnamon, then reduce what is left to a syrup to spoon over.

You'll need

  • 4 tea bags of Twinings Liquorice and Spearmint
  • 600ml freshly boiled water (100C)
  • 4 firm pears, peeled with the stalks left on
  • 3 tablespoons honey
  • 1 cinnamon stick
  • Juice of half a lemon

Method

  1. Brew strong: steep the bags in the boiled water for 5 minutes, then lift them out.
  2. Pour the tea into a wide pan, add the honey, cinnamon and lemon juice, and bring to a gentle simmer.
  3. Sit the peeled pears in the liquid, cover, and poach gently for 20 to 25 minutes, turning now and then, until tender.
  4. Lift out the pears, simmer the liquid for a few minutes to reduce it, then spoon it over. Serve warm or chilled with cream or yoghurt.
  5. Use firm pears such as Conference, as ripe ones turn to mush in the syrup.
What you'll end up with: Tender pears in a glossy, gently spiced syrup, lovely warm or cold with a spoonful of cream or yoghurt.
