Iced, tulsi turns into something quite unusual: a savoury, herby cooler that drinks like a grown up basil lemonade. Brew it strong, chill it, then serve over ice with plenty of lemon and a few fresh basil leaves. Far more interesting than a standard iced tea, and still caffeine free.

You'll need

  • 4 tea bags of Tropical Sun Tulsi
  • 500ml freshly boiled water (100C)
  • 2 tablespoons honey, or to taste
  • 500ml cold water
  • 1 lemon, sliced
  • Fresh basil leaves, optional, and plenty of ice

Method

  1. Steep the 4 tulsi bags in the boiled water for 6 minutes, then lift them out.
  2. Stir in the honey while warm so it dissolves evenly.
  3. Leave to cool, then top up with the cold water and chill well.
  4. Pour into a large jug over plenty of ice and add the lemon slices and a few basil leaves.
  5. Stir gently and serve in tall glasses over more ice.
  6. The basil leaves earn their place; chilling an hour ahead lets them deepen the tulsi note.
What you'll end up with: A herby, savoury iced cooler where holy basil and lemon make an unusual grown up lemonade.
