This is the everyday way to make a good cup of Tetley Earl Grey: a single bag in freshly boiled water, covered, for four minutes, long enough to draw out the bergamot without stewing the Black Tea underneath. Earl Grey is a black tea, so unlike a delicate green it takes a proper boil.

How you finish it is down to you. A splash of cold milk makes a soft, everyday cup, the usual UK way; a thin strip of lemon keeps it bright and fragrant. Pick one rather than both, since lemon will curdle milk, and if you take milk add it after the tea is poured so you can judge the strength by the colour. From here it is a short step to a London Fog or an Earl Grey gin and tonic.

You'll need

  • 1 tea bag of Tetley Earl Grey
  • 250ml freshly drawn water at 100C, just off the boil
  • 1 thin strip of fresh lemon zest, peeled with a vegetable peeler
  • 25ml cold whole milk
  • 1 250ml mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm the mug, then pour in 250ml of freshly boiled water.
  2. Drop in the tea bag and cover with a saucer to keep the bergamot in.
  3. Steep for four minutes, long enough for the bergamot to come through without the black tea stewing.
  4. Lift out the bag and drain it gently against the rim.
  5. Finish your way: a splash of cold milk for a soft everyday cup, or a thin strip of fresh lemon zest for a brighter, fragrant one. Choose one rather than both.
  6. Serve straight away in the warm mug.
What you'll end up with: A bright, everyday cup of Earl Grey, the bergamot clear over the black tea, finished with a little milk or a twist of lemon.
