Everyday Earl Grey (Milk or Lemon)

You'll need
- 1 tea bag of Tetley Earl Grey
- 250ml freshly drawn water at 100C, just off the boil
- 1 thin strip of fresh lemon zest, peeled with a vegetable peeler
- 25ml cold whole milk
- 1 250ml mug, warmed
- 1 saucer for covering during steep
Method
- Warm the mug, then pour in 250ml of freshly boiled water.
- Drop in the tea bag and cover with a saucer to keep the bergamot in.
- Steep for four minutes, long enough for the bergamot to come through without the black tea stewing.
- Lift out the bag and drain it gently against the rim.
- Finish your way: a splash of cold milk for a soft everyday cup, or a thin strip of fresh lemon zest for a brighter, fragrant one. Choose one rather than both.
- Serve straight away in the warm mug.
