In South Africa, where Rooibos comes from, it is very often drunk the way many of us drink Black Tea: with a splash of milk and a little honey. It suits rooibos beautifully, since the tea is naturally sweet and never turns bitter, even after a long steep. This one carries a strawberry note too, which sits surprisingly well against the milk, a bit like strawberries and cream. Give it a good six minutes to draw out all its flavour.

You'll need

  • 1 tea bag of Tropical Sun Rooibos and Strawberry
  • 250ml freshly drawn water at 100C, just off the boil
  • 1 teaspoon of clear honey
  • 25ml warm whole milk
  • 1 250ml mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm your mug with a splash of hot water and pour it away.
  2. Add 250ml of water straight off the boil.
  3. Drop in the tea bag, cover with a saucer, and steep a good six minutes; rooibos will not go bitter, so a long steep only helps.
  4. Lift the bag out and stir in the honey while it is hot.
  5. Add the warm milk and stir through.
  6. Tip: rooibos takes milk far better than green or delicate teas, so do not be shy with it.
What you'll end up with: A naturally sweet, milky cup of rooibos with a strawberries and cream note, South African style.
