A Minty Lemon Cooler with Twinings Liquorice and Spearmint
A homemade mint cooler from the liquorice and spearmint infusion: fresh lemon, soda and barely any added sugar.

The liquorice and spearmint infusion makes a lovely cold drink. Chilled and topped with soda and a squeeze of lemon, it turns into a homemade mint cooler, with the liquorice lending enough sweetness that you barely need any syrup. No alcohol, no caffeine.

Brew it strong, chill it well, then build over ice and lengthen with soda.
You'll need
- 1 tea bag of Twinings Liquorice and Spearmint
- 120ml freshly boiled water (100C)
- 15ml fresh lemon juice
- Chilled soda water to top
- Ice, a lemon slice and fresh mint to serve
Method
- Steep the bag in the freshly boiled water for 5 minutes to make a strong concentrate. Lift out the bag and chill the tea.
- Fill a glass with ice and add the cooled tea and lemon juice.
- Stir well, then top with chilled soda water.
- Garnish with a lemon slice and fresh mint, and serve.
- Bruise a few mint leaves in the glass first to lift the fresh spearmint note.
