The liquorice and spearmint infusion makes a lovely cold drink. Chilled and topped with soda and a squeeze of lemon, it turns into a homemade mint cooler, with the liquorice lending enough sweetness that you barely need any syrup. No alcohol, no caffeine.

You'll need

  • 1 tea bag of Twinings Liquorice and Spearmint
  • 120ml freshly boiled water (100C)
  • 15ml fresh lemon juice
  • Chilled soda water to top
  • Ice, a lemon slice and fresh mint to serve

Method

  1. Steep the bag in the freshly boiled water for 5 minutes to make a strong concentrate. Lift out the bag and chill the tea.
  2. Fill a glass with ice and add the cooled tea and lemon juice.
  3. Stir well, then top with chilled soda water.
  4. Garnish with a lemon slice and fresh mint, and serve.
  5. Bruise a few mint leaves in the glass first to lift the fresh spearmint note.
What you'll end up with: A long, fizzy, minty glass with a clean lemon edge, easy to drink and free of both alcohol and caffeine.
