A warm, milky camomile drink for the end of the day. You brew a strong little shot of Loyd Pure Camomile, sweeten it with honey while it is hot, then top it with frothed milk and the lightest dusting of lavender. Honey is the obvious friend for camomile, picking up the soft floral note already in the cup, and the lavender adds a gentle scent rather than a strong flavour.

Full fat dairy gives the best body against the floral tea, though barista oat froths well if you want it dairy free; ordinary oat tends to split against the tea. Keep the lavender to a real pinch, around eight or ten buds, as too much turns soapy fast, and use culinary or herbal tea lavender, never florist lavender, which is usually sprayed.

You'll need

  • 1 Loyd Pure Camomile pyramid tea bag
  • 100ml filtered water at 95°C
  • 200ml full fat dairy milk (or barista oat for vegan)
  • 1 teaspoon clear acacia honey
  • 1 small pinch of culinary grade dried lavender buds (about 8 to 10 buds; from a herbal tea supplier)
  • 1 small fresh chamomile flower, optional, on the foam
  • Glassware: 350ml tall heatproof glass (latte glass), pre warmed

Method

  1. Warm your glass by filling it with hot water and tipping it out just before you build the drink.
  2. Boil the kettle, then let it stand for about half a minute. Put the Loyd Pure Camomile bag in a small jug, pour over 100ml of the water, cover with a saucer and steep for six minutes.
  3. Lift out the bag, pressing it lightly against the jug, then stir in the honey while the shot is still hot.
  4. Heat 200ml of full fat milk in a small pan until it is hot but not boiling, then froth it for about thirty seconds to a glossy foam.
  5. Pour the camomile and honey into the warm glass. Add the milk down the side, holding the foam back with a spoon, then spoon the foam over the top.
  6. Scatter a small pinch of lavender across the foam and, if you have one, float a fresh camomile flower in the middle.
  7. Drink it while the foam holds, within a few minutes; a heavier hand with lavender tips it soapy, so go light.
What you'll end up with: A tall glass capped with glossy foam, flecked with grey purple lavender and a creamy gold tea showing through the side. Camomile and a breath of lavender on the nose, warm milk and honey underneath, softly sweet at the end.
