The Standard Cup of Tropical Sun Neem
How to brew Tropical Sun Neem, the intensely bitter South Asian leaf, kept palatable with a short steep, honey and lime.

Neem is about as bitter as a tea gets, a dried South Asian leaf long used in diaspora kitchens. It is not a sipping tea in the usual sense, so the aim is simply to make it pleasant: keep the steep short, then bring it into line with honey and a good squeeze of lime.

You'll need
- 1 tea bag of Tropical Sun Neem
- 200ml freshly boiled water (100C)
- 1 to 2 teaspoons honey, to taste
- A squeeze of lime, to taste
Method
- Pop the bag into your cup and pour over the freshly boiled water.
- Steep for 3 to 4 minutes, no longer, so the bitterness stays in check.
- Lift out the bag, then stir in honey to soften the bitterness.
- Add a squeeze of lime to brighten it, taste, and adjust the honey and lime until it suits you.
- Neem is one of the bitterest teas available; start with a very short steep of 2 minutes on the first cup and work up from there as the palate adjusts.
