Lemongrass Jelly (Tropical Sun, Dinner Party Pudding)

A clear, wobbly jelly set from strong lemongrass tea and lime, a light grown up dinner pudding.

Lemongrass Jelly (Tropical Sun, Dinner Party Pudding)

Set a strong brew of Tropical Sun Lemongrass with gelatine and you get a clear, wobbly jelly that tastes purely of the tea, lemony and light. It is the kind of grown up pudding that looks the part at the end of a dinner, especially with a few berries spooned on top.

You'll need

  • 4 tea bags of Tropical Sun Lemongrass
  • 500ml freshly boiled water (100C)
  • 3 tablespoons honey or caster sugar, to taste
  • Juice of half a lime
  • 4 leaves of gelatine (or as the pack directs for 500ml)
  • Fresh berries, to serve

Method

  1. Soak the gelatine leaves in cold water for 5 minutes until soft.
  2. Steep the 4 lemongrass bags in the boiled water for 6 minutes, then lift them out and stir in the honey and lime.
  3. Squeeze out the gelatine and stir it into the hot tea until fully dissolved.
  4. Pour into four glasses or a lightly oiled mould and chill for at least 4 hours until set.
  5. Serve topped with a few fresh berries, or turn out onto plates.
  6. For a firmer jelly that turns out cleanly onto a plate, add an extra half gelatine leaf; for a softer, spoonable set to serve in glasses, use the quantity as stated.
What you'll end up with: A light, lemony jelly with a clean tea flavour, an elegant way to finish a meal.
