Lemongrass Jelly (Tropical Sun, Dinner Party Pudding)

You'll need
- 4 tea bags of Tropical Sun Lemongrass
- 500ml freshly boiled water (100C)
- 3 tablespoons honey or caster sugar, to taste
- Juice of half a lime
- 4 leaves of gelatine (or as the pack directs for 500ml)
- Fresh berries, to serve
Method
- Soak the gelatine leaves in cold water for 5 minutes until soft.
- Steep the 4 lemongrass bags in the boiled water for 6 minutes, then lift them out and stir in the honey and lime.
- Squeeze out the gelatine and stir it into the hot tea until fully dissolved.
- Pour into four glasses or a lightly oiled mould and chill for at least 4 hours until set.
- Serve topped with a few fresh berries, or turn out onto plates.
- For a firmer jelly that turns out cleanly onto a plate, add an extra half gelatine leaf; for a softer, spoonable set to serve in glasses, use the quantity as stated.
