Iced Spiced Evening Tea Pitcher with Yorkshire Tea Bedtime Brew
An iced version of Bedtime Brew, where lemon and lemongrass do the talking and there is no caffeine to keep you up.

Bedtime Brew makes a surprisingly good iced tea. The lemon balm and lemongrass in the blend wake up over ice, the squeeze of fresh lemon picks them up, and the nutmeg and vanilla stop it tasting sharp. Being caffeine free, it is one to pour on a warm evening.

It fills a jug for four. Brew it strong, sweeten it lightly while it is hot, then chill it right down over ice and lemon.
You'll need
- 4 tea bags of Yorkshire Tea Bedtime Brew
- 600ml freshly boiled water (100C)
- 2 tablespoons honey or sugar, to taste
- Juice of 1 lemon, plus extra slices to serve
- 400ml cold water and plenty of ice
- Mint to serve
Method
- Pour the freshly boiled water over the tea bags in a heatproof jug and steep for 4 to 5 minutes.
- Lift out the bags, stir in the honey while hot, then add the lemon juice and let it cool.
- Top with the cold water and a generous amount of ice to chill it down.
- Add lemon slices and mint, and serve over more ice.
- Drop in a few lemon balm or mint leaves as it chills to lift the herbal notes.
