Cerassie Tea Soaked Fruit Loaf (Tropical Sun)

A traditional fruit tea loaf with a marmalade like bitter edge, the dried fruit soaked overnight in light Tropical Sun Cerassie.

Cerassie Tea Soaked Fruit Loaf (Tropical Sun)

Soaking dried fruit in tea overnight is one of the oldest tricks in British baking, and bitter Tropical Sun Cerassie gives it an unusual angle: its bitter edge works against the sweet fruit and sugar much as the bitterness in marmalade does. There is no added fat, so it is a plain, sliceable loaf, good buttered.

⏱ Overnight soak plus 60 min 🍽 Makes 10 slices 📊 Easy 📚 Biscuit Recipes

You'll need

  • 3 tea bags of Tropical Sun Cerassie
  • 300ml freshly boiled water (100C)
  • 350g mixed dried fruit
  • 250g self raising flour
  • 175g soft brown sugar
  • 1 egg, beaten
  • 1 teaspoon mixed spice

Method

  1. Brew light: steep the 3 bags in the boiled water for 4 minutes, then lift them out, and pour the tea over the dried fruit. Cover and soak overnight.
  2. The next day, heat the oven to 160C fan and line a 2lb (900g) loaf tin.
  3. Stir the sugar, beaten egg and mixed spice into the soaked fruit and any remaining tea.
  4. Fold in the flour until just combined, then spoon into the tin and level the top.
  5. Bake for 50 to 60 minutes, until risen and a skewer comes out clean. Cool, then slice and butter.
  6. Soak the fruit for a full 24 hours rather than overnight; the bitter edge softens significantly with the longer soak and the loaf is better for it.
What you'll end up with: A moist, sweet fruit loaf with a gentle bitter edge running under the dried fruit, lovely sliced and buttered.
