Method

  1. Brew light: steep the 3 bags in the boiled water for 4 minutes, then lift them out, and pour the tea over the dried fruit. Cover and soak overnight.
  2. The next day, heat the oven to 160C fan and line a 2lb (900g) loaf tin.
  3. Stir the sugar, beaten egg and mixed spice into the soaked fruit and any remaining tea.
  4. Fold in the flour until just combined, then spoon into the tin and level the top.
  5. Bake for 50 to 60 minutes, until risen and a skewer comes out clean. Cool, then slice and butter.
  6. Soak the fruit for a full 24 hours rather than overnight; the bitter edge softens significantly with the longer soak and the loaf is better for it.
