Cerassie Tea Soaked Fruit Loaf (Tropical Sun)

You'll need
- 3 tea bags of Tropical Sun Cerassie
- 300ml freshly boiled water (100C)
- 350g mixed dried fruit
- 250g self raising flour
- 175g soft brown sugar
- 1 egg, beaten
- 1 teaspoon mixed spice
Method
- Brew light: steep the 3 bags in the boiled water for 4 minutes, then lift them out, and pour the tea over the dried fruit. Cover and soak overnight.
- The next day, heat the oven to 160C fan and line a 2lb (900g) loaf tin.
- Stir the sugar, beaten egg and mixed spice into the soaked fruit and any remaining tea.
- Fold in the flour until just combined, then spoon into the tin and level the top.
- Bake for 50 to 60 minutes, until risen and a skewer comes out clean. Cool, then slice and butter.
- Soak the fruit for a full 24 hours rather than overnight; the bitter edge softens significantly with the longer soak and the loaf is better for it.
