## Description

Ülker Halley: The Marshmallow Sandwich Biscuit, in summary: A marshmallow centre between two plain biscuit discs, all coated in milk chocolate. It changes with the room, soft when warm and chewy when chilled, so store it cool, never dunk it and drink something strong and unsweetened.
Last reviewed by the teas.co.uk team in September 2026.
With Halley, where the pack has been kept decides more about how it eats than anything you pour beside it. Its marshmallow centre is an aerated foam, so one 77g pack can behave like two quite different biscuits.
Discs, foam and a chocolate coat
Halley is built from two plain biscuit discs with marshmallow between them, and the whole assembly is coated in milk chocolate. Britain knows the format under its own names, the Wagon Wheel being the obvious one, and this is Ülker's Turkish take on it. Marshmallow is largely air, which lets it bulk out the middle without much weight, while the coating holds the three parts together and keeps the centre from drying.
The discs are kept plain, with no real butter or salt character. That is deliberate: a biscuit with a strong personality would compete with the filling, and the format works best when only one part at a time is asking for attention. The coating is the only part with much aroma, and it gets the last word, leaving a film of chocolate on the palate.
Why the room changes the biscuit
Marshmallow reacts to temperature in a way that cream and caramel do not. In a warm kitchen it relaxes and turns soft and faintly stringy; chilled, it sets into a chewier texture more like nougat. Both are pleasant, but they really are different biscuits, and it is worth putting one in the fridge at least once to find out which version you prefer.
The smell will not warn you. Marshmallow has almost no aroma and the discs very little, so a pack that has sat somewhere warm smells exactly like a fresh one even when the centre has gone soft. Go by where it has been kept instead: a cool cupboard away from radiators and sunny windowsills keeps the texture steady from the first biscuit in the pack to the last.
On the saucer, with an unsweetened cup
Keep Halley well away from the mug. Dunked, the coating melts first and the whole biscuit loses its shape, usually ending up at the bottom of the cup. There is no snap or crumb to rescue it either, since the bite gives way almost at once and is over in a moment. It belongs on the saucer, eaten between sips rather than in them.
Its sweetness is high and even, so the drink has to do the balancing. A strong black tea, a malty breakfast blend or a black coffee all work, and skip the sugar altogether, because sweet tea next to this soon becomes too much. One or two with a strong brew makes an afternoon treat, and the small 77g pack is a sensible way to get to know it.

FAQ
What kind of biscuit is Halley? A Turkish sandwich biscuit: marshmallow held between two plain discs and coated in milk chocolate, sold here in a 77g pack.
Does Halley survive a dunk? No. The coating melts first and the biscuit falls apart in the cup, so eat it beside your drink.
Why does Halley seem different from one day to the next? Its marshmallow centre responds to temperature: soft and stringy when warm, firmer and chewier when chilled.
Should I keep Halley in the fridge? Not as a rule, but try one chilled once; some people prefer the chewier, nougat-like texture it takes on.
What should I drink with Halley? Black coffee or a strong black tea without sugar, since the biscuit brings all the sweetness the pairing needs.
Curator's note: Keep the pack cool, take one with a strong mug and no sugar, and let the marshmallow do its thing. Chilled is my choice, but try it both ways. Lee, teas.co.uk, Tunbridge Wells.
