## Description

Ülker Biskrem Cocoa: The Filled Biscuit Explained, in summary: A soft, cakey cocoa biscuit with cocoa cream sealed inside it rather than spread between two discs. Warm it briefly to wake the filling, keep it out of the mug and pair it with a strong black tea.
Last reviewed by the teas.co.uk team in September 2026.
Biskrem hides its filling. The cocoa cream is enclosed inside one soft biscuit instead of spread between two crisp ones, and that single construction choice changes how it tastes, how it keeps and how it should be served.
Filled, not sandwiched
A sandwich biscuit leaves its cream showing at the edges between two hard discs. Biskrem does the opposite: a single soft biscuit is wrapped around the cocoa cream, so the filling is closed in and kept away from the air. To hold a soft centre the biscuit has to be soft as well, which is why it eats more like a small bun than a crisp biscuit, yielding under the teeth rather than snapping.
It also flips the order of tasting. With a sandwich, the sweet cream reaches your tongue first. Here the soft cocoa crumb arrives first, carrying very little sugar, and the filling follows a moment later from inside. Cocoa gives the cream a slight bitter edge that a vanilla creme cannot, so the whole thing finishes drier and less sweet than it looks on the plate.
The warm-up trick
At room temperature Biskrem is quiet on the nose, because the cream is sealed inside a fairly dense crumb and very little aroma can escape. Warm it gently for ten or fifteen seconds and that changes completely: the filling softens, the cocoa smell lifts and the biscuit tastes far richer than it does cold. Nothing else you can do with it makes as much difference.
The same construction explains why it keeps well. With the cream wrapped inside, it cannot dry out the way an exposed filling does, and the soft crumb sheds very little into the packet. Keep the pack closed in a cool cupboard between servings, and warm each biscuit only when you are about to eat it, so the filling is soft at the moment it matters.
Beside a cup with grip
Do not dunk it. Its soft crumb has nothing to hold it together in hot liquid, so it collapses in the cup long before it reaches your mouth. Serve it beside the tea instead. If dunking is what you are after, reach for a plain, firm biscuit, and let Biskrem wait on the plate for the second cup, when you can take your time over it.
The cocoa cream needs a tea with grip. A strong black tea brewed hard is the right partner, either a brisk breakfast blend with milk or, in the Turkish way, a small glass of black tea without milk. The tannin cuts through the cream and clears the palate between bites. For coffee drinkers, a short, dark espresso does the same job from the other direction.

FAQ
What is Ülker Biskrem? A soft cocoa biscuit with cocoa cream enclosed inside it, made by the Turkish biscuit maker Ülker and sold here in a 100g pack.
What is the difference between a filled biscuit and a sandwich biscuit? A sandwich puts cream between two discs; a filled biscuit wraps one soft biscuit around the cream, so you taste the crumb first and the filling second.
Can you dunk Biskrem? No. It is soft all the way through and will fall apart in the cup, so eat it beside your tea.
Should I warm Biskrem before eating it? Yes, briefly. A warm-up of ten or fifteen seconds softens the filling and brings out the cocoa aroma.
Who makes Biskrem? Ülker, founded in Istanbul in 1944 by the brothers Sabri and Asım Ülker. pladis, which also owns McVitie's, is the largest shareholder in Ülker Bisküvi.
Curator's note: Warm one for a few seconds, pour a strong black tea and take your time. It is the one to try if every filled biscuit you have met so far has been dry. Lee, teas.co.uk, Tunbridge Wells.
