Mint Tea Lemonade

You'll need

Method

  1. Steep the 4 bags in 500ml water cooled to 80C for 4 minutes for a pale, fragrant base, then lift the bags out without squeezing.
  2. Stir in the honey while warm so it dissolves, then cool to room temperature.
  3. Stir in the lemon juice and the 500ml cold water; adding lemon to a cooled base keeps the colour clean.
  4. Chill until cold.
  5. Serve in tall glasses over plenty of ice with lemon slices and a sprig of mint.
  6. Best within 2 days; green tea fades faster than black.
