Iced Turmeric Lemonade

You'll need
- 2 Tropical Sun Turmeric tea bags
- 200ml freshly drawn water, brought to a true rolling boil
- 1 tablespoon of golden caster sugar
- 50ml fresh lemon juice (about 1 large lemon)
- 100ml chilled fresh sparkling water
- 3 fresh mint sprigs (2 for muddling, 1 for the garnish)
- 1 thin lemon wheel, for the rim
- 1 tall 450ml tumbler, chilled in the freezer for ten minutes
- Enough cubed ice to fill the tumbler (about 250g)
- 1 small heatproof jug
- 1 wooden cocktail muddler or long spoon
- 1 wide paper or metal straw
Method
- Chill the tall 450ml tumbler in the freezer for ten minutes ahead of building the drink.
- Drop the 2 Tropical Sun Turmeric tea bags into the small heatproof jug. Pour over the 200ml of rolling boiling freshly drawn water.
- Cover the jug with a small saucer and steep for six full minutes. The double strength steep (two bags into 200ml of water) is needed because the cubed ice and sparkling water will dilute the drink by about a third.
- After six minutes, lift the 2 tea bags from the jug, do not press, and discard.
- Stir the 1 tablespoon of golden caster sugar into the hot turmeric brew until fully dissolved. Slide the jug into a bowl of cold tap water to cool the sweetened turmeric brew flat in three minutes.
- Lift the chilled tall tumbler from the freezer. Place 2 fresh mint sprigs at the base of the tumbler and crush gently with the wooden cocktail muddler for ten seconds to release the mint oil.
- Fill the tumbler with cubed ice right to the rim.
- Pour the 50ml of fresh lemon juice over the cubed ice.
- Pour the cooled sweetened turmeric brew over the lemon and ice in the tumbler. Top with the 100ml of chilled fresh sparkling water.
- Hook the thin lemon wheel over the rim of the tumbler and stand the third fresh mint sprig upright in the ice as the garnish. Serve immediately with a wide straw.
