Iced Earl Grey Lemonade

Method

  1. Steep the 4 Earl Grey bags in 750ml just boiled water for 4 minutes only. A short steep keeps the bergamot bright; longer and black tea turns bitter and tannic.
  2. Lift out the bags and, while the tea is still hot, stir in the sugar or honey until fully dissolved. Cool, then chill until cold.
  3. Stir in the lemon juice and the cold water or soda. Taste and adjust the balance of sweet and sour.
  4. Fill tall glasses or a jug with plenty of ice and pour over the lemonade.
  5. Garnish with lemon slices and mint. For a punchier jug, brew the tea double strength and serve over lots of ice so it does not dilute.
