Iced Earl Grey Lemonade

You'll need
- 4 Tetley Earl Grey tea bags
- 750ml just boiled water
- 120ml fresh lemon juice, about 3 to 4 lemons
- 70g caster sugar, or 80ml honey, to taste
- 500ml cold water or chilled soda water
- Ice, lemon slices and mint sprigs, to serve
Method
- Steep the 4 Earl Grey bags in 750ml just boiled water for 4 minutes only. A short steep keeps the bergamot bright; longer and black tea turns bitter and tannic.
- Lift out the bags and, while the tea is still hot, stir in the sugar or honey until fully dissolved. Cool, then chill until cold.
- Stir in the lemon juice and the cold water or soda. Taste and adjust the balance of sweet and sour.
- Fill tall glasses or a jug with plenty of ice and pour over the lemonade.
- Garnish with lemon slices and mint. For a punchier jug, brew the tea double strength and serve over lots of ice so it does not dilute.
