Matcha White Chocolate Blondies

You'll need

Method

  1. Heat the oven to 170C fan and line a 20cm square tin with parchment.
  2. Melt the white chocolate and butter together gently over a low heat, stirring.
  3. Off the heat, whisk in the sugar and let it cool for a couple of minutes.
  4. Whisk in the eggs one at a time.
  5. Sift in the flour, matcha and salt, then fold until only just combined.
  6. Pour into the tin and level the top.
  7. Bake for about 22 minutes, until set at the edges with a slight wobble in the middle.
  8. Cool in the tin before lifting out and cutting into nine.
  9. Tip: do not overbake; a wobble now means fudgy later, while a firm centre bakes out dry.
