Iced Yerba Mate, Terere Style

Method

  1. Boil the kettle and let it stand a minute or two to drop to around 80C; mate should never see boiling water.
  2. Steep the 2 pyramid bags in 200ml of the cooled water for five minutes under a saucer, then lift them out.
  3. Cool the brew right down in cold water or the fridge.
  4. Fill a tall glass with ice and pour the cooled mate over.
  5. Lengthen with the cold water, easing it down the back of a spoon.
  6. Drop in the lime wheel and give it a gentle squeeze.
  7. Tip: a few fresh mint leaves are traditional in terere as well, and lift the grassy notes nicely.
