Method

  1. Steep the 4 tea temples in 500ml just boiled water for 4 minutes only. A short steep at double strength keeps it from turning bitter once diluted.
  2. Lift out the bags and stir in the sugar or honey while the tea is hot, if using.
  3. Immediately pour the hot concentrate over a large jug full of ice. Crashing it cold fast stops the cloudiness that slow cooling causes.
  4. Top up with the 500ml cold water and stir.
  5. Serve in ice filled glasses with lemon slices and mint.
  6. If it does go hazy, a small splash of just boiled water clears it again.
