Iced Darjeeling

You'll need

Method

  1. Boil the kettle and let it stand a minute to come down to around 90C.
  2. Steep the 2 pyramid bags in 200ml of the cooled water for five minutes under a saucer, then lift them out.
  3. Cool the brew right down, standing the jug in cold water or chilling it.
  4. Fill a tall glass with ice and pour the cooled tea over.
  5. Lengthen with the cold water, easing it down the back of a spoon.
  6. Tip: a twist of lemon peel, oils squeezed over the glass, is the only addition Darjeeling ever really needs.
