Iced Chamomile Flowers

You'll need
- 4 Teapigs Chamomile Flowers tea temples
- 500ml just boiled water
- 500ml cold water
- 1 tablespoon honey, optional
- Lemon slices and ice, to serve
Method
- Pour the just boiled water over the 4 temples in a covered jug and steep 6 minutes; chamomile takes a generous steep and will not turn bitter.
- Lift the temples out and stir in the honey while the tea is warm, if using.
- Cool to room temperature, then chill. There is no tannin, so it stays clear without crashing over ice.
- Stir in the 500ml cold water.
- Serve over ice with lemon slices; the lemon lifts the honeyed chamomile.
- Caffeine free, so an easy evening drink. The brewed base keeps 3 days in the fridge.
