Cold Brewed Ceylon Green Tea

Method

  1. Put the loose leaves into a 1-litre carafe or jug.
  2. Pour over a litre of cold filtered water and seal or cover.
  3. Leave it in the fridge for about twelve hours, or overnight.
  4. Strain through a fine sieve into a clean jug to remove the leaves.
  5. Serve over ice; it keeps, sealed in the fridge, for a couple of days.
  6. Use cold water, not hot; the slow cold steep is what keeps green tea sweet and free of bitterness.
