How to Brew Green Mint Tea

Method

  1. Warm your mug with a little hot water and tip it out.
  2. Boil the kettle and let it stand a minute or two to drop to around 80C.
  3. Drop in the tea bag and pour the cooled water over.
  4. Cover with a saucer and steep for just three minutes, no longer, to keep it from turning bitter.
  5. Lift the bag out. Drink it as it is, or add fresh mint and a little sugar Moroccan style.
  6. Tip: pour from a height into the cup for a light, frothy top, the way it is done in Morocco.
