Method

  1. Rinse the mug with hot water and tip it away, so the tea does not cool the moment it lands.
  2. Heat 200ml of water to about 80C, just before it boils, to keep the green leaf from scalding.
  3. Add the bag, pour the water over, and cover for three minutes.
  4. Lift the bag out without squeezing it, since pressing a green bag pushes out the harsh tannins.
  5. If you want it stronger, brew a little longer rather than hotter, which keeps the bitterness away.
