A Gentle Cup of Green Mint Tea

You'll need
- 1 tea bag of Cotterley Green Mint Tea
- 200ml water heated to 80C
- 1 220ml mug, warmed
Method
- Warm a mug with hot water and tip it out.
- Boil the kettle, then let it cool for a minute to about 80C; green tea wants it below boiling.
- Add the bag, pour over 200ml and cover for three minutes.
- Lift the bag out without squeezing it, as pressing a green tea bag pushes out bitterness.
- Keep the water off the boil; too hot and both the green leaf and the mint turn harsh.
