Green Tea and Lemon Ice Lollies

You'll need
- 2 tea bags of Tetley Pure Green Tea (or Tetley Decaf Pure Green for young children)
- 300ml just off boil water cooled to about 80C (boil, then rest the kettle for roughly 90 seconds)
- 2 to 3 tablespoons honey or sugar, to taste
- Juice of half a lemon
- Optional: small pieces of strawberry or kiwi to drop into the moulds
Method
- Rest the boiled kettle for about 90 seconds, then steep two bags in 300ml of roughly 80C water for 3 minutes. Lift the bags out without squeezing.
- Stir in the honey while the tea is warm so it dissolves, then add the lemon juice and let it cool completely.
- Drop a few pieces of fruit into each lolly mould if you are using them, then pour in the cooled tea, leaving a little room at the top.
- Add the sticks and freeze for at least 4 hours, or overnight, until solid. Dip the moulds briefly in warm water to release the lollies.
- Sweeten the mix a touch stronger than tastes right warm, because freezing dulls how sweet it reads on the tongue.
