Green Tea and Lemon Ice Lollies

Method

  1. Rest the boiled kettle for about 90 seconds, then steep two bags in 300ml of roughly 80C water for 3 minutes. Lift the bags out without squeezing.
  2. Stir in the honey while the tea is warm so it dissolves, then add the lemon juice and let it cool completely.
  3. Drop a few pieces of fruit into each lolly mould if you are using them, then pour in the cooled tea, leaving a little room at the top.
  4. Add the sticks and freeze for at least 4 hours, or overnight, until solid. Dip the moulds briefly in warm water to release the lollies.
  5. Sweeten the mix a touch stronger than tastes right warm, because freezing dulls how sweet it reads on the tongue.
