Frozen Vanilla Rooibos Orange Pop

You'll need
- 3 Tetley Redbush Vanilla rooibos tea bags
- 350ml just boiled water
- 150ml smooth orange juice
- 100ml whole milk or oat milk, for the creamsicle texture
- 1 tablespoon maple syrup, optional
- 1 small orange, peeled, segmented and the segments halved
- 6 ice lolly moulds and sticks
Method
- Steep the 3 vanilla rooibos bags in 350ml just boiled water for 8 minutes for a strong base; rooibos cannot over brew. Squeeze and remove the bags.
- Stir in the maple syrup, if using, while the tea is hot, then cool it completely.
- Stir in the orange juice and milk. It may look slightly split, which is fine; just whisk it again before pouring.
- Drop a few orange segments into each mould.
- Whisk the rooibos, orange and milk mix, then pour into the moulds leaving a 1cm gap at the top for expansion. Push in the sticks.
- Freeze at least 6 hours, ideally overnight. To release, dip the mould in warm, not hot, water for 10 seconds and pull each stick straight up.
