  1. Pop the fennel bag in your favourite mug.
  2. Pour over the freshly boiled water and leave to steep for 4 to 5 minutes.
  3. Lift out the bag without squeezing it, which keeps the cup sweet rather than sharp.
  4. Taste, and add a little honey or a slice of lemon if you like.
  5. Sip warm and enjoy the gentle aniseed.
  6. For a stronger fennel note, press the bag once against the side of the mug before lifting; the aniseed character can handle it.
