Earl Grey Hot Toddy (Adult)

You'll need

• 1 Teapigs Darjeeling Earl Grey tea temple
• 200ml just boiled water, left 30 seconds off the boil
• 35ml Scotch or bourbon whisky
• 2 teaspoons honey
• Juice of half a lemon, plus a slice and a clove studded lemon, optional

Method

1. Brew the temple in the 200ml just off the boil water for 3 minutes only, then remove it; a short brew keeps the bergamot bright and avoids bitterness under the whisky.
2. Stir the honey into the hot tea until fully dissolved.
3. Add the whisky and the lemon juice and stir.
4. Pour into a warmed heatproof glass with a slice of lemon, studded with a clove or two if you like.
5. Sip while hot. Zero alcohol version: leave out the whisky, add an extra squeeze of lemon and a small piece of fresh ginger to the brew for warmth.
