London Fog

You'll need
- 2 tea bags of Dilmah Earl Grey (for concentrate)
- 100ml freshly drawn water at 100C, just off the boil
- 200ml whole milk
- 1 teaspoon of vanilla syrup
- 1 300ml mug, warmed
- 1 small saucepan and a saucer for covering
- 1 small balloon whisk or milk frother
Method
- Warm your mug, then steep 2 tea bags in just 100ml of just boiled water for 4 minutes, covered.
- Lift out the bags, pressing them gently so you get a strong, dark concentrate.
- Stir the vanilla syrup into the hot concentrate.
- Heat the milk to about 65C, steaming but not boiling, and froth it until silky.
- Pour the concentrate into the mug, then hold the foam back with a spoon as you top up with the milk, letting the froth slide on last.
- Drink it while the foam still holds.
- No vanilla syrup? A small spoon of sugar with a couple of drops of vanilla extract does the same job.
