Cold Brew Lemon Tea (1L Fridge Jug)

Method

  1. Pour 1L of cold filtered water into the clean glass jug. Drop in the 4 Hyson Lemon Infused Black Tea bags.
  2. Add the cucumber wheels and the 2 thin lemon slices to the jug. Add the optional fresh mint sprig if using.
  3. Seal the jug with its tight lid. Refrigerate for ten hours minimum; overnight is the ideal timing (start in the evening, ready in the morning). The colour at ten hours is a clear pale gold amber.
  4. After ten hours, open the jug and lift the four tea bags out with a clean spoon. Press each bag gently against the inside of the jug to release the absorbed water. Discard the bags. Leave the cucumber and lemon slices and the mint sprig in the jug; they keep perfuming the cold brew across its two day fridge life.
  5. Reseal the jug. The cold brew now keeps in the fridge for 48 hours; beyond that the cucumber and lemon start to go soft and the brew loses its bright character.
  6. To serve: pour into a tall glass over cubed ice. Garnish each glass with a fresh small mint sprig and a thin slice of fresh lemon. The cold brew should pour clear pale gold amber with visible cucumber wheels and lemon slices coming through from the jug; some drinkers will spoon a cucumber wheel out of the jug into their glass as a garnish.
  7. Drink within ten minutes per glass; the ice keeps the temperature down and the fresh herb and lemon at the top of the glass perfume each sip. The jug pours four 250ml servings, or six smaller 150ml servings.
