Peach and Mango Iced Tea Punch

Method

  1. Brew the four tea bags in 400ml of just boiled water for four minutes, covered, then take them out.
  2. Stand the jug in cold water for five minutes to cool the tea right down.
  3. Half fill a chilled punch bowl with ice and pour the cold tea over it.
  4. Stir in the sparkling apple juice and the lemon juice.
  5. Scatter in the diced peach and mango.
  6. Top with soda water just before serving so it keeps its fizz.
  7. Ladle into glasses, spooning a little fruit into each one.
  8. Tip: freeze some of the brewed tea as ice cubes so the punch never waters down.
