Mint Hot Chocolate with Baileys

You'll need

• 4 heaped teaspoons of Islands Mint Hot Chocolate Powder (about 25g)
• 100ml whole milk
• 50ml double cream
• 35ml Baileys Original Irish Cream (or a vegan suitable Irish cream alternative)
• 1 fresh mint leaf, for the float
• 1 warmed 300ml mug
• 1 small saucepan
• 1 small balloon whisk

Method

1. Warm a mug with hot water, then pour it away.
2. Warm the milk and cream gently in a small saucepan until steaming, not boiling.
3. Off the heat, whisk in the mint hot chocolate powder until smooth.
4. Pour into the warmed mug.
5. Stir in the Baileys and float a mint leaf on top.
6. Tip: for an alcohol free version, just leave out the Baileys; it is a lovely mint hot chocolate on its own.
