Fresh Mint and Lime Cordial

You'll need
- 4 tea bags of Lipton Green Mint Tea
- 500ml freshly drawn water cooled to 80C
- 200g caster sugar
- 6 fresh mint leaves, lightly crushed
- 40ml fresh lime juice
- 1 medium saucepan
- 1 fine sieve for straining
- 1 sterilised 500ml glass bottle with cap
- 1 saucer for covering the steep
Method
- Brew the four tea bags and six crushed mint leaves in 500ml of water cooled to about 80C for four minutes, covered.
- Lift out the bags, leaving the mint in, and press gently.
- Tip the brew and mint into a pan with the sugar and lime juice.
- Warm gently for ten minutes, stirring until the sugar dissolves; keep it below a hard boil so the green tea stays sweet, not bitter.
- Strain through a fine sieve into a jug.
- Pour into a sterilised bottle while still warm, seal and chill.
- To serve, mix one part cordial with four parts soda water over ice, with fresh mint.
- Tip: keep refrigerated and use within two weeks; a wedge of lime in the glass freshens it further.
