Earl Grey London Fog with a Lemon Twist

Method

  1. Make a concentrate: steep 2 Earl Grey bags in just 120ml just boiled water for 4 minutes. Strong but short keeps the bergamot bright under milk.
  2. Squeeze and remove the bags. Stir in the vanilla, honey, lemon zest and the small squeeze of lemon juice while the tea is hot.
  3. Heat the milk to about 65C, steaming not boiling, then froth it.
  4. Pour the Earl Grey lemon concentrate into a warmed cup, add the hot milk holding the foam back, then spoon the foam on top.
  5. Finish with a little extra lemon zest. Add the juice to the concentrate, not the hot milk, so the milk does not split.
