Earl Grey London Fog with a Lemon Twist

You'll need
- 2 Tetley Earl Grey tea bags
- 120ml just boiled water, for a strong concentrate
- 200ml milk of your choice
- Half a teaspoon vanilla extract or 1 teaspoon vanilla syrup
- Zest of a quarter lemon, plus a small squeeze of juice
- 1 teaspoon honey or sugar, to taste
Method
- Make a concentrate: steep 2 Earl Grey bags in just 120ml just boiled water for 4 minutes. Strong but short keeps the bergamot bright under milk.
- Squeeze and remove the bags. Stir in the vanilla, honey, lemon zest and the small squeeze of lemon juice while the tea is hot.
- Heat the milk to about 65C, steaming not boiling, then froth it.
- Pour the Earl Grey lemon concentrate into a warmed cup, add the hot milk holding the foam back, then spoon the foam on top.
- Finish with a little extra lemon zest. Add the juice to the concentrate, not the hot milk, so the milk does not split.
